Giacomo Borgogno e Figli is a winery located in Piedmont, northwest Italy. The company was founded by Bartolomeo Borgogno in 1761. Borgogno is famous for its practice of storing wines for over a decade before offering them for sale: Cesare Borgogno began this signature policy when he took over the management in the 1920s. In 2008, the estate was sold to the Farinetti family. The winery is located in the centre of the village of Barolo, with cellars dug into the hillside. Borgogno uses traditional winemaking methods, including indigenous yeasts, long fermentations and the use of large Slavonian oak barrels.
The Barolo Classico 2017 is made from Nebbiolo. Spontaneous fermentation takes place in cement vats for 12 days , followed by a submerged cap maceration lasting up to 30 days. After racking, malolactic fermentation began and lasted 15 days. Ageing lasted 4 years in Slavonian oak barrels (4500 litres) followed by 6 months of bottle ageing before release.
